Mapo tofu (Chinese: 麻婆豆腐; pinyin: mápó dòufu) is a popular Chinese dish from Sichuan province. It consists of tofu set in a spicy sauce, typically a thin, oily, and bright red suspension, based on douban (fermented broad bean and chili paste), and douchi (fermented black beans), along with minced meat, traditionally beef . Heat the wok over medium-high heat. Add the canola oil, garlic, ginger and fermented black beans and cook until fragrant, stirring often, about 10 seconds. Add the ground pork and cook, stirring.


Heat oil in wok over high heat until smoking. Add beef and cook, stirring constantly for 1 minute. Add garlic and ginger and cook until fragrant, about 15 seconds. Add chili-bean paste, wine, soy sauce, and chicken stock and bring to a boil. Pour in corn starch mixture and cook for 30 seconds until thickened.


Cook the tofu over low heat for five minutes. Let the tofu absorb the flavor of the seasoning ingredients. Be gentle as the tofu can break easily. Add 1 tablespoon of cornflour slurry to the tofu over medium heat. Combine the slurry with the sauce so that the gravy is thick enough to adhere to the tofu.


Add scallions and stir; add stock. Cook for a minute or so, scraping bottom of pan with a wooden spoon if necessary to loosen any stuck bits of meat, then add tofu. Cook, stirring once or twice, until tofu is heated through, about 2 minutes. Step 3. Stir in the soy sauce; taste, and add salt and red pepper flakes as necessary.


Add the soy sauce, doenjang, gochujang, and sugar and stir to blend with the meat. Add the bell peppers and cook briefly until slightly softened. Mapo Tofu is a classic Szechuan dish that features tofu covered in spices and minced meat. It pairs extremely well with rice, and may even be necessary with how spicy it can get. The name literally translates to "pockmarked old lady tofu", inspired by the old lady that made this dish.


Mapo Tofu Step-By-Step Instructions. Add the beef and soy sauce in a hot wok without any added oil and cook, breaking it up into small pieces. Once the beef is browned, remove from the pan. Add a little more cooking oil to the pan and saute the garlic and ginger for a few minutes until soft and aromatic.

Stir-fry over high heat until the meat loosens and becomes pale.


Dice the tomatoes and green bell pepper. Stem and chop the white button mushrooms. In a small bowl, combine the chili garlic paste, black bean with garlic sauce, bean paste, soy sauce, hoisin sauce, and sugar. Stir until smooth. Dice the tofu into 1-inch (2 ½ cm) cubes. In a large skillet or wok, heat the olive oil over medium heat.

Mapo tofu, like a lot of Chinese recipes, contains meat without really focusing on the meat. Meat is one ingredient among many, rather than the core of the dish. As such, it's pretty easy to make this vegan (or pescetarian). First and foremost, omit the pork. Keep the sesame oil though - just add it to the sauce for the tofu.


STEP 2. Heat a wok and pour in the groundnut oil. Get this really hot and fry the pork until it's crispy. Remove with a slotted spoon but leave the oil behind. STEP 3. Add the bean paste and cook, stirring for a few mins until fragrant, then add the black beans, ginger and garlic.


Cut the tofu into small cubes and set aside. Bring a pot of water to a boil and add a pinch of salt. Turn the heat down to a simmer then add the tofu and cook for 2 minutes. Remove from the heat and let soak in the salted water while you prepare the rest of the dish. In a wok, heat up the oil over medium heat.


Add the mushrooms. Cook and stir for 2 minutes or so, until the mushrooms are evenly coated with the spices. Add a bit of vegetable broth if it start to stick. Add the vegetable stock, five spice powder, and sugar. Stir to mix well and bring to a simmer. Spread the tofu in the broth in a single layer.
