Soft Multigrain Bread Details Flavor: Slightly nutty with an earthy, satisfying flavor similar to whole wheat bread. A little brown sugar adds mild sweetness. Texture: This wholesome bread is wonderfully soft without being flimsy. It's great for sandwiches, but perfectly satisfying plain or with a spread of butter. 1 1/2 cups multigrain flour or cereal mix (see post on how to make multigrain flour) 2 3/4 cups boiling water 4 tablespoons butter (plus more to grease the loaf pans) 1/3 cup honey 2 1/2 teaspoons instant yeast 1 teaspoon vital wheat gluten (optional, but this will make your bread significantly softer) 4 ½ cups all-purpose flour 1 teaspoon salt


Place it in a lightly greased 8 1/2" x 4 1/2" bread pan. Drape the pan lightly with greased plastic wrap, and let the loaf rise for about 1 1/2 hours, until it's crowned about 1" over the rim of the pan. Towards the end of the rising time, preheat the oven to 350°F. Bake the bread for 35 to 40 minutes, or until it's golden brown, and a digital. Pat dough into a 7-inch square, and form into a tight log, sealing dough together with the heel of your hand. Nestle into a lightly greased 1-pound loaf pan, seam side down; cover loosely as before. Second Rise: Let dough proof until puffy, light, and risen about 2 1/2 inches above rim of pan at the very center.
